It's nice to see that you found a way to loose weight that seems to work for you. Good for you! And now stick to it, even when you return to the office.

I don't want to talk you out of it, you do you and loosing weight is a great experience. But be aware that the insulin spike happens only for easy carbs. Complex carbs get digested over a longer period of time so you absorb the carbs over a longer period of time, and thus you don't get that spike. So an apple or potatoes won't cause an insulin spike while a piece of bread or sugar will absolutely cause it.

Carbs are not the devil, and they fulfill an important task in our metabolism: power in a short amount of time. You can't do that with fat. So e.g. when you push a heavy weight on the bench or when you run fast you need carbs.
